Ingredients
For the Chicken Rolls
-
8 thin chicken breast fillets
-
1 cup shredded mozzarella cheese
-
1 small carrot, grated
-
1 small capsicum, finely chopped
-
1 small onion, finely chopped
-
2 cloves garlic, minced
-
2 tablespoons fresh parsley or coriander, chopped
-
1 tablespoon cooking oil
-
½ teaspoon salt, or to taste
-
½ teaspoon black pepper
-
1 teaspoon paprika
-
½ teaspoon dried oregano
For the Creamy Tomato Sauce
-
1 cup tomato purée
-
½ cup cooking cream
-
½ cup chicken stock or water
-
1 tablespoon butter
-
1 teaspoon garlic paste
-
½ teaspoon paprika
-
Salt and black pepper, to taste
-
½ cup grated mozzarella cheese for topping
Instructions
Step 1: Prepare the Filling
Heat the cooking oil in a pan over medium heat. Add the chopped onion and garlic and sauté for 2 minutes. Add the grated carrot and chopped capsicum and cook for another 3–4 minutes.
Season with salt, black pepper, paprika and oregano. Remove from the heat and allow the mixture to cool slightly. Stir in the parsley and mozzarella cheese.
Step 2: Prepare the Chicken
Place the chicken fillets on a clean cutting board. Gently flatten them to an even thickness if necessary.
Season lightly with salt, pepper and paprika. Place a spoonful of the prepared vegetable and cheese filling onto each fillet.
Fold in the sides and roll the chicken tightly. Secure with toothpicks if necessary.
Step 3: Brown the Rolls
Heat a little oil in a frying pan. Place the chicken rolls in the pan and brown them on all sides for approximately 5–7 minutes in total.
The chicken does not need to be fully cooked at this stage because it will finish cooking in the oven.
Step 4: Prepare the Sauce
Melt the butter in a saucepan over medium heat. Add the garlic paste and cook for about 30 seconds.
Stir in the tomato purée, chicken stock, cooking cream, paprika, salt and black pepper. Simmer gently for 3–5 minutes until the sauce is slightly thickened.
Step 5: Assemble the Dish
Preheat the oven to 190°C (375°F).
Spread a thin layer of sauce over the bottom of a baking dish. Arrange the chicken rolls in a single layer.
Pour the remaining sauce over the rolls and sprinkle the grated mozzarella cheese evenly on top.
Step 6: Bake
Place the baking dish in the preheated oven and bake uncovered for 25–35 minutes, depending on the thickness of the chicken rolls.
Ensure that the chicken reaches an internal temperature of 74°C (165°F). For a golden, bubbly cheese topping, broil for an additional 2–3 minutes, watching carefully.
Step 7: Garnish and Serve
Remove the dish from the oven and allow the rolls to rest for 5 minutes.
Garnish with freshly chopped parsley or coriander. Serve warm with rice, mashed potatoes, naan, garlic bread or a fresh salad.
Recipe Notes
-
Mozzarella provides a creamy, stretchy texture, while cheddar gives a stronger cheese flavour.
-
You can add spinach, mushrooms, sweetcorn or zucchini to the filling.
-
For a richer sauce, add 2 tablespoons of cream cheese.
-
If the sauce becomes too thick, add a little chicken stock or water.
-
Use evenly sized chicken fillets to ensure they cook at the same rate.
-
Avoid overcooking the chicken, as it can become dry.
-
Remove any toothpicks before serving.
-
Always check the internal temperature rather than relying on the colour of the chicken.
Tips for Best Results
-
Do not overfill: Too much filling can cause the rolls to open during cooking.
-
Brown before baking: This adds colour and improves flavour.
-
Use enough sauce: The sauce helps keep the chicken moist during baking.
-
Choose good-quality cheese: Mozzarella melts well and creates a delicious topping.
-
Rest before serving: Allowing the rolls to rest for 5 minutes helps retain their juices.
-
Broil carefully: A short burst of high heat creates a golden finish without drying out the chicken.
