🥔🧀 French-Inspired Potato, Meatball & Cheese Bake

🛒 Ingredients
- 3 large potatoes
- 1 white onion, chopped
- 1 lb (450 g) ground beef
- 1 egg
- ½ cup breadcrumbs
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
- 1½ cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped (for garnish)
👩🍳 Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Peel the potatoes, boil them for 10–12 minutes until just tender, then let cool slightly and slice into ¼-inch rounds.
- In a bowl, combine the ground beef, egg, breadcrumbs, garlic, Italian seasoning, paprika, salt, and pepper. Mix well and shape into small meatballs.
- Heat the olive oil in a skillet over medium heat. Brown the meatballs for 5–6 minutes, then remove.
- In the same skillet, sauté the chopped onion until soft and lightly golden.
- Arrange half of the potato slices in the baking dish. Top with the onions and meatballs, then sprinkle with half of the mozzarella.
- Add the remaining potato slices and finish with the rest of the mozzarella and all of the Parmesan.
- Bake for 20–25 minutes, or until the cheese is melted, bubbly, and golden brown.
- Garnish with fresh parsley and serve hot.
